Bitter Gourd sauted in Coconut Gravy/ Karathe Puddi Sagle

Bitter Gourd is available here all round the year and are always very fresh. I get those very frequently. There are couple of recipes which I prepare often. Most of the recipes are either from my aunt who is very fond of bitter gourd or my MIL. This recipe is from my MIL.

Preparing this is time consuming. Definitely worth trying !

4 bitter gourd
1/4 cup oil
1 cup grated coconut
5 red chillies
1/2 teaspoon coriander seeds
1/2 teaspoon urad dal
1/2 onion, chopped
7-8 curry leaves
1/4 teaspoon tamarind extract
1/2 teaspoon mustard seeds
1/2 cup water

Chop bitter gourd into small pieces.
Take half of the oil and fry bitter gourd pieces until crispier.
Mean while fry coriander seeds and urad dal in 1 tablespoon oil.
Make a paste of grated coconut, red chillies, fried coriander seeds and urad dal.
In a pan heat oil. Add mustard seeds. When mustard seeds starts spluttering add curry leaves.
Fry chopped onion until golden brown.
Add coconut paste to it along with 1/2 cup water.
Keep stirring. Add salt and tamarind paste to it.
Bring it to boil and when the water is completely absorbed, add fried bitter gourd pieces and turn off the heat.
Serve with rice as side dish and also can be eaten with urad dosa.

Preparation Time: 35 minutes

Note: This tastes best if you prepare just before eating. The crispiness of bitter gourd tastes too good when sauted in coconut paste.
